Our Rabbit and Smoked Rye pasta dish is an inspired Autumnal dish from our resident Italian wannabe chef R. It is a dish that has came about partly through necessity, his love of creating amazing pasta dishes and the great suppliers we have had a chance to work with.
Arriving at Platform 1 on day one, R noticed a strange pasta machine, and we later realised this was a pasta extruder, allowing us to make all sorts of cool shaped pasta (think Fusilli, Linguini, Spaghetti). Knowing R there was no way he would be able to get through the residency without putting it through its paces (he's broken a total of 1.5 machines to date), after all why make pasta by hand when there is a machine to do it for you! Indeed half a case of 'when life gives you lemons...'.
However, in the usual Smoke & Salt fashion we wanted this dish to be unusual in terms of execution, and a technique we developed last year for one of our pop-up dishes was to cold smoke pasta. This was a perfect technique for this dish as the rye flour dough really holds onto the smoke flavour. We chose rye flour from Imbham Farms - James who runs the farm will mill the flour on demand and ship it to us via next day delivery. We have had the pleasure of using some of the most flavourful grains and flour from Imbhams - based in Surrey - and this dish wouldn't be half what it is without that rye flour - so a big shout-out to you James!
