It's been a while since I last wrote a Books for Cooks article, which is odd considering I own and read so many damn books. Like previously, I am going to focus on one niche of cookbook - and an invaluable one at that - Charcuterie! And if you are like me and just got up out of your seat and did a little dance for joy, this article is for you.
Now that you've had an update on what we've been up to so far in the residency, we thought we'd give you a bit more of a look at one event in particular that we were lucky enough to be a part of. The YBFs were held last week on the 15th of September and a small team of us got together to bring some Smoke & Salt treats down to the Tate Britain to see what it was all about....
If you are reading this then it means you're more than interested in joining us for Brunch at Platform 1 this weekend. This is a short, very sweet post giving those of you who have been reading the first chance to get yourselves booked in for brunch and try our very own brunch burger. This will be comprised of a brioche bun, cast-iron beef patty, beaufort cheese and bacon jam. To make sure you get your hands on one of these limited-availability patties (we will only have 12 available on both days!) you're going to need to book with us by clicking here RIGHT NOW! Under the "Special Requests" section make sure you type in S&SBURGER01, with 01 being the number of burgers you would like for your booking. Please don't be ridiculous and say 12 because if you do.....you're getting 12! If you know of some really deserving friends or loved ones like, share, tweet, retweet and just show your overall love by following us on our social media. That will be all!!
We are just over the 2 month mark for our residency at the newly opened Platform 1 on Lordship Lane, East Dulwich and as Chef's we've been lucky enough to enjoy a great space to test out some great ideas as we continue to develop and grow as a team. Here's an update on how things have been going so far (make sure you read all the way to the end as we've got a special treat for readers of this blog!)...
I had the time (let's face it and only enough money) for one big, show-stopping meal during my holiday. Meagre wages had been saved and there was definitely a hit-list of places that I hadn't visited during my first trip to New York City. This is one story of a quiet, intimate and delicious culinary journey.
I have recently had the good fortune to be allowed by R. to take my first holiday of the year. It was booked in from early this year, and the excuse I had was that good friends of mine were to be married in upstate New York. Only it turned out Smoke & Salt were set to have their busiest week to date while I was gone...
This will be a very quick post - and a very random one. If you haven't heard of Google Deep-Dream it is a pretty cool piece of open-source code. For non-techies like you and I, it is a piece of computer language that Google has created and made available to the public to utilize - providing you have the know-how and processing capacity...
With the plethora of vegetables (and fruit of course) available to us through the summer we chef-folk do our best to preserve, manipulate and respect all that is available to us over the warmer months, in the hopes of having access to them later in the year. We'll give you an idea of some of our favourites, why they work and a couple of solid pickle recipes to get you through to winter...
